salted caramel no-bake cookies
Incorporated the best of a few no-bake recipes and used the new Jello caramel pudding flavor. Can omit the sea salt if you don't want salted caramel.

Ingredients
- 3/4 cup margarine
- 2 cups sugar
- 2/3 cup pet evaporated milk
- 1 teaspoon vanilla
- 1-3.4 oz. box jello instant caramel pudding mix
- 3 1/2 cups quick oats
- 1/2 cup milk or dark chocolate chips
- 1/2 cup heath bar toffee chips
- dash sea salt
- 1/2 cup shredded coconut (optional)
How To Make salted caramel no-bake cookies

Step 1Melt margarine and stir in sugar, evaporated milk, and vanilla.

Step 2Bring to a rolling boil over medium heat, stirring constantly. Boil for 1 minute.

Step 3Remove from heat and add oats and dry pudding mix (and coconut, if using). Let sit for 5 minutes to slightly cool.

Step 4Sprinkle toffee chips, salt and chocolate chips over top. Stir gently to just blend, being careful to not fully melt all the chips and toffee bits by stirring.

Step 5Drop by teaspoons onto 2 or 3 waxed paper-lined cookie sheets.

Step 6Let sit for an hour or two until firm. Remove from sheets and store in an air-tight container.
