salted caramel no-bake cookies

Incorporated the best of a few no-bake recipes and used the new Jello caramel pudding flavor. Can omit the sea salt if you don't want salted caramel.

Ingredients

  • 3/4 cup margarine
  • 2 cups sugar
  • 2/3 cup pet evaporated milk
  • 1 teaspoon vanilla
  • 1-3.4 oz. box jello instant caramel pudding mix
  • 3 1/2 cups quick oats
  • 1/2 cup milk or dark chocolate chips
  • 1/2 cup heath bar toffee chips
  • dash sea salt
  • 1/2 cup shredded coconut (optional)

How To Make salted caramel no-bake cookies

  • Step 1
    Melt margarine and stir in sugar, evaporated milk, and vanilla.
  • Step 2
    Bring to a rolling boil over medium heat, stirring constantly. Boil for 1 minute.
  • Step 3
    Remove from heat and add oats and dry pudding mix (and coconut, if using). Let sit for 5 minutes to slightly cool.
  • Step 4
    Sprinkle toffee chips, salt and chocolate chips over top. Stir gently to just blend, being careful to not fully melt all the chips and toffee bits by stirring.
  • Step 5
    Drop by teaspoons onto 2 or 3 waxed paper-lined cookie sheets.
  • Step 6
    Let sit for an hour or two until firm. Remove from sheets and store in an air-tight container.
