Rock and Rise Ranger cookies

These cookies are breakfast in your hand, with oats,nuts,fruit and Bacon! I made these for the bacon loving guys at my job and they hung around the plate with their coffee singing their praises! Definitely not a cookie to take to your office when there is work to be done. For vegetarians omit the bacon, they are still delicious!

1 cup margarine
2 cup brown sugar
2 eggs
1 tsp vanilla
1/2 tsp salt
2 tbs baking soda
1 cup coconut
1 cup chopped walnuts
2 cup oats
2 cups rice krispies
1/2 cup dried cranberries
1 cup chocolate chips
1/4 cup crumbled crisp cooked bacon

How to Make Rock and Rise Ranger cookies


  • 1Mix all dry ingredients in a large bowl. Except cereal, cranberries, nuts, bacon, and chocolate chips. Set aside.
  • 2In a mixer bowl cream butter, sugar, eggs and vanilla. With the mixer running add flour/oats mixture a little at a time until incorporated. Add nuts, chocolate chips, cranberries, rice cereal and bacon. Dough will be stiff.
  • 3Shape into golfball sized balls and place 3" apart on greased cookie sheets. Press flat with a fork. Bake at 375° oven for 8 to 11 minutes or until lightly browned. Allow to cool slightly and remove to wire racks to cool completely. Grab a cup of coffee and dunk!
