These ricotta cheese cookies will be delicious on any dessert table or cookie plate. Soft and moist, there's a hint of vanilla flavor in the cookies. Ricotta cheese helps add moisture to the tender cookie. Golden raisins and walnuts add an extra layer of sweet and nutty flavor. These cookies will be delicious on any dessert table or cookie plate. We whipped up an easy glaze for half the cookies for a touch of sweetness and to add decorations.

Ingredients
- 1/2 pound butter, softened
- 2 cups granulated sugar
- 3 large eggs
- 1 pound ricotta cheese
- 2 teaspoons vanilla extract
- 4 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup golden raisins, add more or less if you like
- 1 cup chopped walnuts, add more or less if you like
How To Make ricotta cheese cookies

Step 1Preheat the oven to 350 degrees F. Cream the sugar and butter.

Step 2Add the eggs, one at a time, mixing well.

Step 3Add the ricotta cheese and mix.

Step 4Add in the vanilla extract and the dry ingredients. Blend well.

Step 5Stir in the nuts and raisins.

Step 6Drop by the rounded teaspoonful onto a greased cookie sheet.

Step 7Bake at 350 degrees for 12-15 minutes until lightly golden on the bottom. The tops will stay relatively white.
