I have been doing 1/2 cup butter plus 1/2 Crisco shortening, instead of all butter, and I like the results too.

I'm not a big raisin fan, so I only use 1/2 cup raisins.

2

2 tsp

2 c
all purpose flour
1 tsp

1/2 tsp
baking powder
1 1/2 tsp
salt
2 c
crisp rice cereal. (rice krispies)
2 c
rolled oats
1 c

1 c

How to Make Ranger Cookies

Step-by-Step

  • 1Cream butter and both sugars together.
  • 2Beat in eggs, one at a time.
  • 3Add vanilla.
  • 4Stir flour, baking soda, baking powder and salt together. I like to sift them, but it isn't needed.
  • 5Add flour mixture slowly to the creamed mixture.
    Mix well.
  • 6Mix cereal, oats, coconut and raisins together in a separate bowl.
  • 7Slowly mix in cereal etc. to batter.
The dough will be thick. I usually mix this step by hand.
  • 8Roll into 1 inch balls, or the size you like.
Arrange on greased or parchment lined baking sheet.
  • 9Bake in 350-375 degree F oven for 6-10 minutes. I found that it works best in my oven at 350 F, for about 7 minutes.
