I have been doing 1/2 cup butter plus 1/2 Crisco shortening, instead of all butter, and I like the results too. I'm not a big raisin fan, so I only use 1/2 cup raisins.

Ingredients

  • 1 cup butter
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 - eggs (large)
  • 2 teaspoons vanilla extract (pure)
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 1/2 teaspoons salt
  • 2 cups crisp rice cereal. (rice krispies)
  • 2 cups rolled oats
  • 1 cup coconut
  • 1 cup raisins

How To Make ranger cookies

  • Step 1
    Cream butter and both sugars together.
  • Step 2
    Beat in eggs, one at a time.
  • Step 3
    Add vanilla.
  • Step 4
    Stir flour, baking soda, baking powder and salt together. I like to sift them, but it isn't needed.
  • Step 5
    Add flour mixture slowly to the creamed mixture. Mix well.
  • Step 6
    Mix cereal, oats, coconut and raisins together in a separate bowl.
  • Step 7
    Slowly mix in cereal etc. to batter. The dough will be thick. I usually mix this step by hand.
  • Step 8
    Roll into 1 inch balls, or the size you like. Arrange on greased or parchment lined baking sheet.
  • Step 9
    Bake in 350-375 degree F oven for 6-10 minutes. I found that it works best in my oven at 350 F, for about 7 minutes.
