pumpkin molasses cookies
Saw some of these on line and thought I could create my own version, using my already yummy Spicy Molasses Cookie recipe...and so I did and they were a hit yesterday with family!!! They are really soft and super good!!! :o)

Ingredients
- 1/2 cup butter, softened
- 1/2 cup 100% pumpkin, canned or cooked
- 1/2 cup brown sugar, dark if you have it
- 1/2 cup sugar
- 1 - egg
- 1/4 cup molasses
- 2 1/2 cups flour
- 2 teaspoons baking soda
- 1/2 teaspoon sea salt
- 1 teaspoon cinnamon
- 3/4 teaspoon all spice
- 3/4 teaspoon ginger
- 1/4 teaspoon coarse black pepper
- FOR ROLLING:
- 1/2 cup sugar
- 1 teaspoon pumpkin pie spice
How To Make pumpkin molasses cookies

Step 1Cream together butter, pumpkin, sugars, egg and molasses until creamy. Add dry ingredients and blend well.

Step 2Mix together 1/2 c sugar and pumpkin pie spice in small bowl. This dough will be really soft, roll into balls, or use cookie scoop, roll in sugar mixture, place onto cookie sheets, flatten slightly with bottom of a glass or palm of hand.

Step 3Bake at 350 for 11-13 minutes . Mine were large, I used a 1/4 c size scoop and I baked for 15 minutes.
