pumpkin cookies
This is one of my favorite cookie recipes. Especially great for the fall time of year. They are so moist and chewy. I'm a soft chewy cookie kinda girl. :) Absolutely delicious. I hope you all think the same. :) I have added "Healthy" in even though there is a good amount of sugar in them, but pumpkin is good for you, and should you decide to add the raisins & or walnuts to them, it makes for an even healthier treat :)

Ingredients
- 3 1/2 cups all purpose flour
- 2 1/3 cups oats, uncooked
- 1 3/4 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 1/2 teaspoons salt
- 3 1/2 sticks butter, softened
- 1 3/4 cups sugar
- 1 3/4 cups brown sugar
- 1 can (15 oz.) pure pumpkin
- 2 large eggs
- 1 3/4 teaspoons vanilla extract
- 1 1/3 cups raisins
- 1 1/3 cups walnuts
How To Make pumpkin cookies

Step 1In Med. bowl combine flour, oats, baking soda, cinnamon, and salt, set aside.

Step 2In Large bowl beat butter, sugar, and brown sugar until fluffy. Add in pumpkin, eggs, and vanilla. mix well. gradually add in flour mixture mixing well after each addition. stir in raisins and or walnuts. spoon medium sized spoonfuls onto cookie sheet (i like to use the cookie scoop that looks like a mellon baller/ ice cream scoop) Bake at 350*f for 14-16 minutes.
