All my life Pfeffernüsse has been a favorite part of the holidays! They made my grandmother so proud of her German roots even though she didn’t make them herself. We all loved them so and I wanted to make my own so after a lot of research and trial and error, I came up with this recipe! Now we never buy them anymore. Ingredients

  • 10 tablespoons butter
  • 1 cup brown sugar
  • 2/3 cup honey
  • 6 tablespoons heavy cream
  • 4 large eggs
  • 5 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 cup almonds, chopped
  • 1/2 teaspoon salt
  • 3 teaspoons cinnamon
  • 1 teaspoon cloves
  • 1 teaspoon allspice, ground
  • 1/2 teaspoon coriander
  • 1 1/2 teaspoons cardamon, ground
  • 1 teaspoon ginger ground
  • 1 teaspoon star anise (ground)
  • 1 teaspoon freshly grated nutmeg
  • 1/2 teaspoon white pepper

How To Make pfeffernüssen (pepper nuts)

  • Step 1
    Sift flour, baking soda, salt, and all spices together in a bowl.
  • Step 2
    Add chopped almonds to flour and spices.
  • Step 3
    Put butter, brown sugar, honey, and heavy cream into a heavy-bottomed pot on the stovetop. Heat until butter melts and sugar is dissolved.
  • Step 4
    Let the butter and sugar mixture cool for a few minutes. Add eggs when the mixture is cool enough to not cook them.
  • Step 5
    Mix in the flour mixture
  • Step 6
    Wrap in plastic and refrigerate for at least 12 hours.
  • Step 7
    Roll the chilled dough on a lightly floured board (with lightly floured hands) into rolls about 3/4” thick. With a knife cut in roughly 3/4” lengths. Each piece should weigh 9 grams.
  • Step 8
    Now roll pieces of dough into balls and place on a parchment lined cookie sheet about 1 1/2 inches apart.
  • Step 9
    Bake in a preheated oven for 10-12 minutes.
  • Step 10
    When they are cool they can be eaten as is, rolled in powdered sugar or coated in royal icing!
