All my life Pfeffernüsse has been a favorite part of the holidays! They made my grandmother so proud of her German roots even though she didn’t make them herself. We all loved them so and I wanted to make my own so after a lot of research and trial and error, I came up with this recipe! Now we never buy them anymore.
The recipe should make about 175 cookies

  • 5 c
    all purpose flour
  • 1 1/2 tsp
    baking soda
  • 1/2 tsp
  • 3 tsp
  • 1 tsp
  • 1 tsp
    allspice, ground
  • 1/2 tsp
  • 1 1/2 tsp
    cardamon, ground
  • 1 tsp
    ginger ground
  • 1 tsp
    star anise (ground)
  • 1 tsp
    freshly grated nutmeg
  • 1/2 tsp
    white pepper
  • 1 c
    almonds, chopped
  • 1 c
    brown sugar
  • 2/3 c
  • 10 Tbsp
  • 6 Tbsp
    heavy cream
  • 2 large

How to Make Pfeffernüssen (pepper nuts)


  1. Sift flour, baking soda, salt, and all spices together in a bowl.
  2. Add chopped almonds to flour and spices.
  3. Put butter, brown sugar, honey, heavy cream into a heavy bottomed pot on stove top. Heat until butter melts and sugar is dissolved.
  4. Let butter and sugar mixture cool for a few minutes.
  5. Mix in the flour mixture and once combined, mix in eggs.
  6. Wrap in plastic and refrigerate for at least 12 hours.
  7. Roll the chilled dough on a lightly floured board (with lightly floured hands) into rolls about 3/4” thick. With a knife cut in roughly 3/4” lengths. Each piece should weigh 9 grams.
  8. Now roll pieces of dough into balls and place on a parchment lined cookie sheet about 1 1/2 inches apart.
  9. Bake in a preheated oven for 10-12 minutes.
  10. When they are cool they can be eaten as is, rolled in powdered sugar or coated in royal icing!
