This is another amazing recipe I found in that cookbook my mother put together for the church so many years ago. This one comes from Barbara Martin. Enjoy!

Ingredients

  • 1/2 c
    butter
  • 1 c
    brown sugar, packed
  • 2
    eggs
  • 1 c
    persimmon pulp
  • 1/2 c
    orange juice
  • 1 Tbsp
    grated orange rind
  • 2 1/2 c
    flour
  • 1 tsp
    baking soda
  • 3/4 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/2 tsp
    cloves
  • 1 tsp
    cinnamon
  • 1/2 tsp
    nutmeg
  • 1 c
    chopped nuts
  • 1 c
    raisins

How to Make Persimmon Orange Delights

Step-by-Step

  1. Cream butter and sugar lightly, then add next 4 ingredients. Mix and sift all dry ingredients together. Add to creamed mixture. Fold in nuts and raisins. Drop by spoonfuls onto greased cookie sheet. Bake at 375 degrees for 12-15 minutes.
