peppermint latte patties
These cookies have s unique texture and some of my all time favorite holiday flavors. I have made them for so many years and they are always everyone's favorites. Like a warm cup of holiday latte each bite says Happy Holidays!

Ingredients
- 14 tablespoons butter
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 - egg yolk
- 1 teaspoon vanilla
- 1 cup plus 2 tablespoons ap flour
- 1/4 cup dutch process cocoa
- 1 teaspoon instant coffee powder
- 1/2 cup confectioners' sugar
- 1/2 cup mascapone cheese
- 6 tablespoons light cream, divided use
- 1 cup semi sweet chocolate chips
- 1/2 cup crushed candy canes
How To Make peppermint latte patties

Step 1Preheat oven to 350 degrees. Cream 10 tablespoons butter and granulated and brown sugars in a medium bowl. Beat in yolk and vanilla. Add flour, cocoa, coffee and beat until smooth. Place dough on wax paper and roll into a 10 x 2 inch log. Wrap and refrigerate for 1 hour.

Step 2Slice dough into 1/4-inch rounds and flatten gently on a cookie sheet. Bake for 7-8 minutes. Let cool 10 minutes. Meanwhile, cream 4 tablespoons butter, confectioner's sugar, mascarpone cheese and 3 tablespoon cream until smooth. Spread over half of the baked cookies and close with a plain baked cookie.

Step 3Melt chocolate chips and remaining cream in a small saucepan, adding more cream to make smooth but not runny. Spread over a half of each cookie and top wet chocolate with candycanes.
