peanut butter & oatmeal cookies

I was running low on peanut butter, but wanted to make cookies, so I said, hmm! Why don't I try some oatmeal to make them thicker, and it worked wonderfully. They taste so good, my hubby says these are his favorite peanut butter cookis, expect for the ones I add chocolate chunks too, lol.

Ingredients

  • 1 cup softened butter
  • 1 cup packed light brown sugar
  • 3/4 cup sugar
  • 1 cup peanut butter, i used creamy
  • 2 - eggs
  • 1 cup flour
  • 1/2 cup whole wheat flour or all purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 cup quick cooking oats

How To Make peanut butter & oatmeal cookies

  • Step 1
    Heat oven to 350. Lay parchment paper over cookie sheets. In lg bowl, cream together butter, brown sugar, sugar and peanut butter until smooth.
  • Step 2
    Beat in eggs. In medium bowl, combine flours, baking soda and salt. Beat flour mix into butter mix. Mix in oats until combined.
  • Step 3
    Drop by tspfulls on parchment paper. Bake 10-15 mins, or until just light brown.
