Such an easy recipe and lots of cookies for your cookie jar. My kiddos love these with a big glass of milk. Great to add to your Christmas cookie trays! I particularly love these cookies as they're not greasy, like some cookies I've tried. Loved by all! They're not a hard cookie, just enough chew for my taste! A real winner!!! Enjoy!

yield 60 cookies - about the size of a half dollar coin.

Ingredients

  • 1 cup each - granulated sugar and packed brown sugar
  • 1 cup shortening - i use nothing but crisco
  • 2 - eggs
  • 1 teaspoon vanilla extract
  • 1 cup peanut butter, crunchy or smooth....i prefer crunchy
  • 3 cups self rising flour

  • Step 1
    Preheat oven to 350 degree F. In a large bowl, cream together the shortening, sugars, eggs and vanilla extract. Beat in peanut butter. Beat in flour, dough should be stiff, not sticky.
  • Step 2
    Scoop 1 1/2 tsp sized pieces of batter and roll into balls. Place on ungreased baking sheets, about 1 inch apart. Either dip the back of fork into sugar or water and press cookie with the back of fork.
  • Step 3
    Bake for 10 - 12 minutes. Remove from sheet pan to cool. Store in covered container. Note: to make your own self rising flour - for each cup of flour sift together the flour, 1/4 tsp salt and 1 1/2 tsp baking powder.
