party size three chip chocolate pecan cookies
I made this recipe for our 2015 Arkansas Reunion and it was a big hit with everyone. The big difference in this and many of the other cookie recipes is I prefer to use EXRA VIRGIN OLIVE OIL, instead of butter and a variety of different chocolate chips. The results are that the cookies are moist chewy and very tasty & have such a nutty flavor. They are irresistible. This recipe is for a large gathering of people , I do have a SMALLER size recipe posted called BLACK WALNUT GHIARDELLI CHOCOLATE CHIP COOKIES which is a slight variation to this recipe.

Ingredients
- 7 cups white lily all purpose flour
- 2 teaspoons baking soda
- 1 teaspoon kosher salt
- 2 cups light brown sugar, firmly packed
- 1 cup granulated sugar
- 2 cups olive oil, extra virgin
- 6 large whole eggs, room temperture
- 3 tablespoons vanilla bean paste or extract
- 2 cups ghirardelli milk chocolate chips
- 1 cup semi sweet chocolate chips
- 1 cup white chocolate chips
- 4 cups chopped pecans or other nuts

Step 1PREHEAT THE OVEN TO 325 DEGREES F. Spray several cookie sheets with baker's joy or cooking spray and set aside till needed. Add the brown sugar & regular sugar to a large mixing bowl, then add in the EVOO (extra Virgin Olive Oil, and beat until mixture becomes creamy and smooth.

Step 2BREAK EGGS INTO A MEDIUM SIZE BOWL AND ADD TO SUGAR MIXTURE ONE EGG AT A TIME. Then add in Vanilla Bean paste or extract.

Step 3Add flour baking soda and salt to a separate bowl. Add to batter mixture in 1/3 intervals. Beating well after each addition.

Step 4You may need to pour batter into a much larger bowl so that the nuts and chips can be added. Then switch from a beater to a large spoon or spatula, and stir until all the nuts and chips have been added to batter.

Step 5Using a tablespoon drop dough onto prepared cookie sheet, and space about 2-3 inches apart.

Step 6Place in preheated 325 degree oven and bake for 12 minutes. Then remove from oven. BUT ALLOW COOKIES TO REMAIN ON COOKIE SHEET FOR AN ADDITIONAL 10 TO 12 MINUTES OR SO BEFORE REMOVING WITH A SHARP SPATULA onto a cooling rack.

Step 7When cookies are completely cooled place on a large serving platter, and watch everyone dig in & come back for more.
