~ orange essence blueberry shortbread ~

Melt in your mouth awesomeness! I added some orange zest, orange extract and dried blueberries to my Grams shortbread recipe and they turned out just as I had hoped. Delish!!!!

Ingredients

  • 2 1/2 sticks softened butter
  • 3/4 cup sugar
  • 3/4 teaspoon orange extract
  • 3/4 teaspoon dried orange zest, less if using fresh
  • 3 1/2 cups flour
  • 1/4 cup confectioners' sugar for sprinkling
  • 1/3 cup chopped, dried blueberries

How To Make ~ orange essence blueberry shortbread ~

  • Step 1
    Preheat oven to 350 degree F. Cream together the sugar and butter until fluffy. Mix in the extract and zest. Beat in the flour, dough should be crumbly.
  • Step 2
    Stir in blueberries. Using clean hands, pinch about a tablespoon of dough and squeeze into a ball, place on cookie sheet about 1/2 inch apart. ( Gram would sometimes press the dough into a pan and bake them that way, then cut. )
  • Step 3
    Using a glass dipped in sugar, press lightly on dough to flatten a little.
  • Step 4
    Bake for 15 minutes or until starting to lightly brown on edges. Remove from oven and cool on rack. Sprinkle with confectioners' sugar.
  • Step 5
    Enjoy with a nice cold glass of milk.
