oatmeal zucchini cookies with chocolate chips

The zucchini plants in my gardens are growing like crazy this year! So I try to add zucchini to as many recipes as possible. Including these amazing cookies. Enjoy!

Ingredients

  • 1 cup all purpose flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups brown sugar
  • 1 cup butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 3/4 cups oatmeal
  • 2 cups zucchini,shredded
  • 3/4 cup semi-sweet mini chocloate chips
  • 1/2 cup pecans,chopped

How To Make oatmeal zucchini cookies with chocolate chips

  • Step 1
    Mix butter and sugar until fluffy. Add egg and vanilla to that mixture.
  • Step 2
    In a separate bowl, mix flour, baking powder, oats, salt, and cinnamon. Add this dry mixture to the previous butter mixture.
  • Step 3
    Slowly add zucchini, pecans, and chocolate chips.
  • Step 4
    Put tablespoon fulls of the dough on the cookie sheets. Preheat the oven to 350 degrees and bake for 15-18 minutes or until edges are lightly brown.
