My diabetic Dr gave me this recipe because I told her that I love oatmeal cookies..she is a sweetheart!

Ingredients

  • 1/2 cup packed light brown sugar
  • 1/4 cup margarine, softened
  • 1 - egg plus 1 egg white, lightly beaten
  • 1 tablespoon thawed frozen apple juice concentrate
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups uncooked quick oats
  • 1/2 cup chopped dates or raisins

How To Make oatmeal-date cookies

  • Step 1
    Preheat oven to 350 degrees. Lightly coat cookie sheets with nonstick cooking spray; Set aside.
  • Step 2
    Beat sugar and margarine in large bowl. Add egg white, apple juice and vanilla; Mix well. Add flour, baking soda and salt; Mix well. Stir in oats and dates. Drop by rounded teaspoonsfuls onto prepared cookie sheets.
  • Step 3
    Bake 8-10 minutes until edges are very lightly browned. (Centers should still be soft)Cool 1 minute on cookie sheets. Remove to wire rack and cool completely. 65 calories 11 carbohydrates 2 grams of fat 1 gram of fiber
