My diabetic Dr gave me this recipe because I told her that I love oatmeal cookies..she is a sweetheart!

Ingredients

  • 1/2 c
    packed light brown sugar
  • 1/4 c
    margarine, softened
  • 1
    egg plus 1 egg white, lightly beaten
  • 1 Tbsp
    thawed frozen apple juice concentrate
  • 1 tsp
    vanilla extract
  • 1 1/2 c
    all-purpose flour
  • 2 tsp
    baking soda
  • 1/4 tsp
    salt
  • 1 1/2 c
    uncooked quick oats
  • 1/2 c
    chopped dates or raisins

How to Make Oatmeal-Date Cookies

Step-by-Step

  1. Preheat oven to 350 degrees. Lightly coat cookie sheets with nonstick cooking spray; Set aside.
  2. Beat sugar and margarine in large bowl. Add egg white, apple juice and vanilla; Mix well.

    Add flour, baking soda and salt; Mix well. Stir in oats and dates. Drop by rounded teaspoonsfuls onto prepared cookie sheets.
  3. Bake 8-10 minutes until edges are very lightly browned. (Centers should still be soft)Cool 1 minute on cookie sheets. Remove to wire rack and cool completely.
