My diabetic Dr gave me this recipe because I told her that I love oatmeal cookies..she is a sweetheart!

Ingredients

1/2 c
packed light brown sugar
1/4 c
margarine, softened
1
egg plus 1 egg white, lightly beaten
1 Tbsp
thawed frozen apple juice concentrate
1 tsp
vanilla extract
1 1/2 c
all-purpose flour
2 tsp
baking soda
1/4 tsp
salt
1 1/2 c
uncooked quick oats
1/2 c
chopped dates or raisins

How to Make Oatmeal-Date Cookies

Step-by-Step

  • 1Preheat oven to 350 degrees. Lightly coat cookie sheets with nonstick cooking spray; Set aside.
  • 2Beat sugar and margarine in large bowl. Add egg white, apple juice and vanilla; Mix well.

    Add flour, baking soda and salt; Mix well. Stir in oats and dates. Drop by rounded teaspoonsfuls onto prepared cookie sheets.
  • 3Bake 8-10 minutes until edges are very lightly browned. (Centers should still be soft)Cool 1 minute on cookie sheets. Remove to wire rack and cool completely.
