If you want gluten-free cookies, use GF oats. These are REALLY good and no one would ever know they were wheat free, 100% whole grain and lower in sugar than most cookies.

Ingredients

  • 1 cup oat flour(you can grind oats in blender or food processor to make your own)
  • 1/2 cup brown sugar(i use sucanat)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup plain yogurt
  • 2 tablespoons coconut oil, light olive oil or grapeseed oil
  • 1 - egg
  • 1 teaspoon vanilla
  • 1 2/3 cups regular oats
  • 1 cup chocolate chips(or raisins, nuts or combination)

How To Make oatmeal chocolate chip cookies(wheat free)

  • Step 1
    Preheat oven to 350F. Grease a cookie sheet or line with parchment paper or silicone mat.
  • Step 2
    Combine flour, sugar, baking powder, baking soda and salt and whisk well.
  • Step 3
    Add the yogurt, oil and egg and blend. Stir in the oats and chocolate chips.
  • Step 4
    Drop onto cookie sheets and bake for 8 or nine minutes. Don't over bake...the centers should still look slightly soft.
