oatmeal chocolate chip cookie topped with love

My inspiration for this cookie came from the Carmalita Bars. I thought it would be fun to do a cookie version. They arent only a pretty cookie but they super good. This cookie is buttery and chewy plus the caramel and pecan tops it off perfect!

Ingredients

  • 1 1/2 cups packed brown sugar
  • 2 sticks butter room temp
  • 1 teaspoon pure vanilla extract
  • 1 - egg
  • 2 cups oatmeal, uncooked
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semisweet chocolate chips
  • 1 jar caramel ice cream topping..i used smuckers
  • - toasted pecan halves..about 3 dozen

How To Make oatmeal chocolate chip cookie topped with love

  • Step 1
    Preheat oven to 350
  • Step 2
    In a large bowl cream butter, brown sugar, egg and vanilla until well blended.
  • Step 3
    In a seperate bowl mix flour, baking soda, and salt. Add flour mixture slowly.
  • Step 4
    Stir in oats, then chocolate chips
  • Step 5
    Drop Rounded tablespoons full on a ungreased cookie sheet..although i always use parchment paper..my new bestfriend
  • Step 6
    Bake 9-11 minutes
  • Step 7
    While the cookie is still hot straight out of the oven take the back of a small spoon and make a well in each cookie. Then spoon a dab of caramel in each cookie then top with a toasted pecan.
