Nutter Butter Banana Pudding Trifle

Banana pudding is my absolute favorite! I buy it @ any restaurant, if it's served, and am mostly disappointed. (Although, Beau Rivage in Biloxi, Mississippi has a great version). I am always looking for lil twists to put on this yummy classic when I make it @ the house. This is one of my personal favorites. Who can resist peanut butter, cookies, and banana pudding in one? 3 c
3 large
3/4 c
splenda, or sugar
1/3 c
all purpose flour
2 Tbsp
2 tsp
vanilla extract
5 large
bananas, sliced
1 lb
nutter butter cookies, broken into thirds
2 c
whipped cream (optional)


1For 15-20 minutes, constantly whisk together milk, eggs, splenda/sugar, and all purpose flour until thickened. Remove from heat, stir in butter and vanilla. Chill.

Pudding shortcut: 1tsp vanilla, 3c milk, 2pk instant vanilla pudding. allow to set. stir in 8oz sour cream.
2Spoon 1/2 chilled pudding mixture into 3qt trifle. Top w/ cookies and bananas. Spoon remaining pudding mixture on top. Cover w/ whipped cream in desired.

Optional: crush several cookies into 1c crumbles and dust over trifle.
