For some reason when I think of fall I think of oatmeal cookies!!! Found this recipe and added lots of extra ingredients (ie nuts and cocoanut). They were like I remembered

Ingredients

  • 1 c
    butter softened
  • 2 c
    brown sugar
  • 2
    eggs
  • 2 tsp
    pure vanilla extract
  • 1/2 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1/4 tsp
    salt
  • 2 c
    all purpose flour
  • 2 c
    oatmeal
  • 1 bag(s)
    chocolate chips
  • 1 c
    cocoanut
  • 1 c
    nuts of choice

How to Make Not your Mothers Oatmeal Cookies!

Step-by-Step

  1. Preheat oven to 350 degrees. Line large cookie sheets
    with parchment paper.
  2. In a large bowl (or a mixer with a paddle attachment) cream the butter and brown sugar together. Add eggs vanilla, baking soda, baking powder, and salt. Beat until mix is light in color and fluffy
  3. Add flour and oatmeal-combine. Then add chocolate chips cocoanut, and nuts--just to combine
  4. Drop by spoonful .( I used a scoop and made larger ones.) onto the parchment lined cookie sheets. Bake 11-15 minutes or until lightly brown--I need the 15 minutes probably because I made them big. Cool on racks
