For some reason when I think of fall I think of oatmeal cookies!!! Found this recipe and added lots of extra ingredients (ie nuts and cocoanut). They were like I remembered

yield 50 if you make your cookies large but easily can do 6-7 dz.

Ingredients

  • 1 cup butter softened
  • 2 cups brown sugar
  • 2 - eggs
  • 2 teaspoons pure vanilla extract
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups all purpose flour
  • 2 cups oatmeal
  • 1 bag chocolate chips
  • 1 cup cocoanut
  • 1 cup nuts of choice

How To Make not your mothers oatmeal cookies!

  • Step 1
    Preheat oven to 350 degrees. Line large cookie sheets with parchment paper.
  • Step 2
    In a large bowl (or a mixer with a paddle attachment) cream the butter and brown sugar together. Add eggs vanilla, baking soda, baking powder, and salt. Beat until mix is light in color and fluffy
  • Step 3
    Add flour and oatmeal-combine. Then add chocolate chips cocoanut, and nuts--just to combine
  • Step 4
    Drop by spoonful .( I used a scoop and made larger ones.) onto the parchment lined cookie sheets. Bake 11-15 minutes or until lightly brown--I need the 15 minutes probably because I made them big. Cool on racks
