Ingredients
- 1/4 cup melted coconut oil
- 1/3 cup honey
- 1 large egg
- 1 1/2 teaspoons pure vanilla extract
- 1 1/4 cups quick oats
- 1/2 cup gluten-free flour (i use bob's red mill)
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon sea salt
- 1/4 cup semi-sweet chocolate chips (i use sugar-free hersheys)
- 1/4 cup dried cranberries or golden raisins or both
How To Make no-sugar and gluten-free chewy oatmeal cookies

Step 1Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

Step 2In a large bowl, mix together the first 4 ingredients by hand with a wooden spoon.

Step 3Add the remaining ingredients and stir gently.

Step 4Spoon onto prepared baking sheet by tablespoonfuls. Bake 10 minutes, until lightly golden on the outside and set on the inside. Don't overbake.
