no cholesterol almond cookies
This is the second original cookie recipe I have developed to assist with a healthier diet and the lowering of cholesterol in the diet. This is an amazingly delicious and simple cookie. You could dress it up a bit by adding some chopped dried cranberries and some chopped candied ginger...but they are perfectly good plain.."just as is". I hope you love these new healthier desserts!

Ingredients
- 3/4 cup almond meal
- 1 1/2 cups all purpose flour
- 1 cup sugar
- 1/2 teaspoon salt
- 1 1/4 teaspoons baking powder
- 3/4 teaspoon baking soda
- 2/3 cup canola oil
- 2 large egg whites
- 1/2 teaspoon vanilla
- 1/4 teaspoon almond extract
How To Make no cholesterol almond cookies

Step 1Mix dry ingredients in a large bowl.

Step 2Mix oil, eggs and extracts in a separate bowl. Combine with the dry ingredients just until the dough comes together.

Step 3Chill dough an hour.

Step 4Make 1 1/4 - 1 1/2inch balls of dough. The dough will need a good squeeze to stick together. Place 12 balls of dough on an ungreased cookie sheet. Gently flatten each with a fork.

Step 5Bake in a 375 degree oven (350 for a convection oven)for 11 minutes.

Step 6Remove from oven and rest 2 minutes before transferring to a rack to cool completely. Store airtight. Makes 32 cookies.
