no-bake chocolate marshmallow bar
This bar is a favorite childhood memory. My mom would occasionally make these when we had company. They were always my favorite treat. I remember sneaking them from the fridge... so that's where that bad habit came from! Shame on me, lol! They are like eating fudge but more airy because the marshmallows don't melt.
Blue Ribbon Recipe
Super simple to make, these no-bake chocolate marshmallow bars are full of flavor and textures. They remind us of Rocky Road ice cream in a fudgy candy form. Chocolate and marshmallows pair perfectly. The chocolate is rich and has a slight peanut butter flavor. Coconut adds even more flavor and texture. We didn't add the optional walnuts and regretted that after we took a bite. We suggest adding them to make these no-bake bars even better.
Ingredients
- 1 stick butter
- 1 cup peanut butter, smooth or crunchy
- 1 cup semi-sweet chocolate chips
- 1 cup butterscotch chips
- 1 bag mini marshmallows (10 oz)
- 1 cup shredded coconut
- 1/2 cup walnuts, chopped (optional)
How To Make no-bake chocolate marshmallow bar

Step 1Butter a 9x13 pan.

Step 2In a large microwavable bowl, place butter, peanut butter, chocolate chips, and butterscotch chips.

Step 3Microwave for 1 1/2 minutes. Stir and microwave for 30 seconds. If not smooth and creamy, microwave for another 30 seconds. Then 15 seconds at a time until it's smooth and creamy always stirring well.

Step 4When smooth and creamy, allow to cool slightly. Add coconut and walnuts (if using).

Step 5Then add marshmallows.

Step 6Stir to mix well. Make sure everything is well coated.

Step 7Pour into prepared pan and spread to cover the bottom. Sprinkle with more coconut if desired. Cool in refrigerator until firm about 1/2 hour. Cut and store in the refrigerator.
