new fangled almond butter cookies

This recipe came out of desperation of trying to find something to do with the very large jar of almond butter I bought (on recommendation from a neighbor) but then I didn't care for it like I do peanut butter. So I just used my "old fashion peanut butter cookie" recipe and adjusted it.. hence the "new fangled" cookies,,,lol

Ingredients

  • 1 1/4 cups sugar
  • 1/2 cup (1stick) butter, room temperature
  • 1 - egg
  • 1 cup almond butter
  • 1 teaspoon almond extract
  • 1/2 teaspoon salt
  • 1/2 tablespoon baking soda
  • 1 3/4 cups all purpose flour

How To Make new fangled almond butter cookies

  • Step 1
    Preheat oven to 375'f. grease baking sheets or line with parchment paper (I personally prefer the parchment lined baking sheets)
  • Step 2
    In a large bowl, cream toghether the sugar and soft butter. Add the egg and beat well til light. Mix in the almond butter and the almond extract. Mix the flour, salt and baking soda together and then add to the wet mixture and beat until well combined.
  • Step 3
    Roll dough into 1 inch balls and then roll in additional suagr. Place on baking sheets and flatten with a fork in a crisscross pattern.
  • Step 4
    Boake 10-12 minutes and then cool on a wire rack. Store in an ait tight container.
