Ingredients

  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 teaspoons baking powder
  • 4 large eggs
  • 1/4 teaspoon sea salt
  • 1 cup unsalted butter at room temperature
  • 10 ounces cream cheese
  • 1/4 pound unsweetened chocolate, melted and cooled
  • 1 1/2 teaspoons chocolate extract, optional
  • 1 cup splenda granular (sucralose)
  • 2 teaspoons instant coffee granules
  • 1 1/2 cups almonds, finely ground
  • 1/3 cup dutch-processed cocoa powder

How To Make my brownies

  • Step 1
    Preheat oven to 350 F. Grease a 9x13 inch baking pan and line the bottom with parchment paper.
  • Step 2
    In a large bowl, beat the cream cheese and butter until smooth. Beat in the chocolate and sweetener. Beat in the eggs, one at a time, scraping the bowl well after each addition. Add the coffee granules and extracts. Beat until combined.
  • Step 3
    In a medium bowl, mix the almond meal, cocoa, salt and baking powder. Add to the chocolate mixture and beat well. Scrape into the prepared pan and smooth the top.
  • Step 4
    Bake for 35-40 minutes, until the top is firm. Cool on a wire rack before cutting. Store covered in the refrigerator.
