Ingredients

  • 1 cup milk
  • 2 1/2 tablespoons baking amonia **
  • 1 pound lard
  • 2 cups sugar
  • 3 - eggs
  • 2 teaspoons anise oil **
  • 10 cups flour (or more)
  • **ANISE OIL AND BAKING AMONIA BOTH AVAILABLE AT KING ARTHUR FLOUR

How To Make mrs fiegels cut out cookies

  • Step 1
    Preheat oven to 375 degrees. Dissolve the baking amonia in the milk==Heat in LARGE microwavable bowl (trust me-this will really expand). It will smell like amonia-don't let this deter you as it isn't in the flavor-it's for keeping the cookies fresh. NOTE the baking amonia is used in Europe as a preservative to keep things fresher. It does not compromise the cookies at all.
  • Step 2
    Beat lard until smooth as possible, then gradually add the sugar and eggs, one at a time. To this add the milk/amonia mix and the anise oil
  • Step 3
    Add enough flour (I always start at 8 cups and add up to 10--more than 10 cups makes dough too flowery) to make dough easy to handle. Roll on parchment paper to desired thickness. Cut into shapes
  • Step 4
    Bake at 375 degrees apx 10 minutes-you don't want the edges brown. NOTE that when you open the oven door on the first batch, there is a powerful smell of amonia. The cookies will not taste like that-- Cool on rack. Frost, decorate and enjoy
