molasses cookies aka mule muffins
Been making these for years, low sugar substitute for regular molasses cookies and they travel well.

Ingredients
- 1 cup molasses
- 1/2 cup margerine or shortening
- 1 teaspoon salt
- 1 3/4 teaspoons baking powder
- 1 teaspoon baking soda
- 2 1/2 cups flour
- 1 1/2 teaspoons ginger
How To Make molasses cookies aka mule muffins

Step 1Heat molasses to boiling and remove from heat.

Step 2Mix in margarine or shortening and soda.

Step 3Sift flour, baking powder, salt and ginger together and mix in.

Step 4Chill dough well.

Step 5Roll these out thin (1/16-1/8")and cut out to desired shape. Place on lightly greased cookie sheet and bake at 350 for 5-7 minutes. Overcooking can result in a slight bitter flavor, but they get eaten just the same.
