molasses cookies aka mule muffins

Been making these for years, low sugar substitute for regular molasses cookies and they travel well.

Ingredients

  • 1 cup molasses
  • 1/2 cup margerine or shortening
  • 1 teaspoon salt
  • 1 3/4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 1/2 cups flour
  • 1 1/2 teaspoons ginger

How To Make molasses cookies aka mule muffins

  • Step 1
    Heat molasses to boiling and remove from heat.
  • Step 2
    Mix in margarine or shortening and soda.
  • Step 3
    Sift flour, baking powder, salt and ginger together and mix in.
  • Step 4
    Chill dough well.
  • Step 5
    Roll these out thin (1/16-1/8")and cut out to desired shape. Place on lightly greased cookie sheet and bake at 350 for 5-7 minutes. Overcooking can result in a slight bitter flavor, but they get eaten just the same.
