Been making these for years, low sugar substitute for regular molasses cookies and they travel well.

  • 1 c
  • 1/2 c
    margerine or shortening
  • 1 tsp
  • 1 3/4 tsp
    baking powder
  • 1 tsp
    baking soda
  • 2 1/2 c
  • 1 1/2 tsp

How to Make Molasses Cookies aka Mule Muffins


  1. Heat molasses to boiling and remove from heat.
  2. Mix in margarine or shortening and soda.
  3. Sift flour, baking powder, salt and ginger together and mix in.
  4. Chill dough well.
  5. Roll these out thin (1/16-1/8")and cut out to desired shape. Place on lightly greased cookie sheet and bake at 350 for 5-7 minutes. Overcooking can result in a slight bitter flavor, but they get eaten just the same.
