mocha peppermint chocolate chip cookies
I love Chocolate and peppermint ..It just says Christmas to me. I picked up some Andes peppermint crunch baking chips and never found a recipe that I really liked. I adapted this recipe from my Oh My Mocha cookies. These cookies are easy to make and turned out very soft and cake like. Just the right balance of chocolate and peppermint .

Several Happy Festive People..makes a couple dozen..approximately
Ingredients
- 1 box cake mix, devils food
- 2 - eggs
- 1/2 cup butter room temp
- 2 ounces coffee(i use leftovers from the morning..2 shot glasses)
- 1 teaspoon peppermint extract
- 2 tablespoons dark chocolate cocoa powder
- 1 cup semi-sweet chocolate chips
- 1/2 cup andes peppermint crunch baking chips
- - powdered sugar to top(optional)

Step 1Preheat oven to 350

Step 2Cream together butter, egg, coffee, peppermint extract

Step 3Mix Cake mix until everything is blended well

Step 4Add chocolate chips and peppermint crunch baking chips, stir in by hand. I used a cookie scoop and drop rounded scoops on a cookie sheet lined with parchment paper

Step 5Bake 9-11 on parchment paper or ungreased cookie sheet

Step 6When cooled sprinkle with a little sifted powdered sugar..optional
