I used to make these with my grandmother. Now, I'm teaching my grand children how to make them :-)
If they are rolled out, they are crisp. But I have used less flour and made them like drop cookies, and they are softer that way.

Ingredients For mawmaw's tea cakes

3 csugar

3eggs
-
1/2 cbuttermilk
-
1 cshortening
-
2 tspbaking powder

3/4 tspbaking soda

1 tspsalt
-
3 tspvanilla extract (see note below)

all-purpose flour (about 3 or 4 cups)
How To Make mawmaw's tea cakes

1Mix all ingredients together.
Add enough flour to get desired consistency ( about 3 or 4 cups ).
Roll out on floured board.
Cut with cookie cutter, and place on a greased cookie sheet. -
2Bake in a pre-heated oven at 375 degrees, until lightly browned.

3NOTE: If you like lemon flavor, you can replace the vanilla extract with lemon extract.
