maple nut cookies
I came up with this recipe as an after school snack for the kids. They were lucky that there were still some left by the time they got home!!

Ingredients
- 1 cup flour(i used white whole wheat)
- *1/2 cup sugar(i used sucanat)
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup softened butter(i used half butter/half coconut oil)
- 1/2 cup pure maple syrup
- 1 - egg
- 1/2 teaspoon vanilla
- 1 cup crispy rice cereal(i used the brown rice variety)
- 1/2 cup oats
- 1/2 cup finely chopped nuts(pecans, walnuts)

Step 1Preheat oven to 350F.Combine the flour, baking soda, baking powder, salt and sugar in a small mixing bowl. In another bowl, beat the butter, syrup, egg and vanilla until well combined. Add the dry ingredients to the wet and mix. Stir in the cereal, oats and nuts. Drop onto greased baking sheets and bake 10-12 min. until just starting to brown. Cool on pan 1 min., them remove to racks.

Step 2*When I made these this time, I only used 1/4c of the sugar in an effort to make it a healthy snack. They were still plenty sweet, thanks to the maple syrup!
