mama dee's outrageous oatmeal cookies

I have been making these cookies for over 30 yrs. It took alot of trial and error to get them just the way I wanted them..crispy edges, chewy centers, and full of flavor. I hope you enjoy them as much as we do.

Ingredients

  • 3/4 cup butter, softened
  • 1 1/2 cups peanut butter, creamy or chunky
  • 1/2 cup sugar
  • 1 1/4 cups brown sugar, firmly packed
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 cup all purpose flour
  • 1 cup white whole wheat flour (or use all ap flour or all white ww four)
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups quick cooking oatmeal
  • 1 cup chocolate chips
  • 1/2 cup vanilla or white chocolate chips
  • 1 cup chopped pecans, walnuts or almonds
  • 3/4 cup flaked coconut

How To Make mama dee's outrageous oatmeal cookies

  • Step 1
    Preheat oven to 350 degrees. Line cookie sheets with parchment paper.
  • Step 2
    Cream butter & peanut butter in stand mixer bowl while you measure out the other ingredients. Add sugar & brown sugar. Beat for 2 minutes then beat in eggs and vanilla. Sift flour, baking soda, & salt. With mixer on low, slowly add flour mixture to creamed mixture until incorporated. Add oatmeal, chocolate chips, white chips, nuts and coconut. Mix until well combined. Scoop out dough onto cookie sheets and press down with the bottom of a glass dipped in flour to keep dough from sticking to it. Bake for 10-12 minutes until cookies are very light brown. Cool for 15 minutes on cookie sheet. Let set out until completely cool. Store in airtight container. Enjoy!
