These scrumptious White Chocolate Macadamia Nut Cookies with a sweet taste of a tropical island, creamy white chocolate and buttery macadamia nuts are a great addition to a hot coffee in the morning or anytime of the day. I’ve been making these cookies now for over 30 years and I hope you’ll enjoy them!!

Approximately 6 dozen cookies.
Ingredients
- 1 cup butter, softened room temperature
- 1 1/2 cups brown sugar, packed
- 2 - eggs, room temperature
- 2 teaspoons vanilla extract
- 1/2 teaspoon almond extract
- 3 cups all purpose flour
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 2 cups white chocolate chips, i use ghirardelli
- 1/2 cup flaked coconut opt.
- 2 cups macadamia nuts, coarsely chopped
How To Make white chocolate macadamia nut cookies

Step 1Preheat oven to 350º. Cream together butter and sugars until combined well scraping down the sides. Add vanilla extract and the eggs, one at a time. In a separate bowl, mix together flour, salt, and baking soda. Slowly the dry ingredients to the mixer and mix well, fold in the white chocolate chips and the macadamia nuts. Drop dough by teaspoonful’s onto ungreased cookie sheets. Bake for 10 to 12 minutes in the preheated oven, or until a golden brown.

Step 2Bake for 10 to 12 minutes, or until lightly golden. Bake 2-3 minute longer for a crunchier cookie.
