I created this recipe from the idea of a traditional junk cookie. The difference...a yummy cookie you can feel good about eating.

  • 1 1/4 c
    flour or whole wheat flour
  • 1/2 tsp
  • 1/2 tsp
    baking soda
  • 1/2 c
  • 1 c
    brown sugar
  • 1/2 c
  • 1
  • 1/4 c
  • 1 Tbsp
  • 2 1/4 c
    quick oats
  • 1/4 c
  • 1/2 c
    dried cranberries or "craisins"
  • 1/2 c
    your choice of nuts. i use walnuts
  • 1/4 c
    mini chocolate chips or 1/2 c regular chips
  • 3 Tbsp
    ground flax
  • 1 Tbsp

How to Make Lunch Cookie


  1. Mix flour, salt, and soda. Set aside. Beat margarine, sugars, egg, water, and vanilla.
  2. Add to flour mixure. Mix well. Stir in oats and mix well. If the mixture seems too dry you may add a tablespoon of water.
  3. Mix in all other ingredients. Drop by teaspoonfuls onto GREASED cookie sheet. Bake at 350 for 11 minutes for chewy cookies or 13 min for crunchier cookies.

    These freeze very well and are so hearty they make a great afternoon snack to get through the work day. They are full of antioxidants and heart healthy flax. Makes you feel just a little better about eating a cookie. :)
