  • 1/4 c
    crushed nilla wafers
  • 1/4 c
  • ·
    zest of two limes
  • 4 Tbsp
    butter, cold
  • 1
  • 1/2 c
    flour + 2 tablespoons
  • 1/2 c
    powdered sugar

How to Make Lime Cooler Cookies


  1. Preheat oven to 350 degrees. Line small baking sheet with parchment paper.
  2. In a small bowl mix together sugar and lime zest.
  3. Slice the cold butter in small pieces and add to sugar.
  4. Beat butter and sugar until creamy.
  5. Add egg and beat until combined.
  6. Add crushed wafers and flour and beat until combined. Dough is crumbly, warmth of hands will bring it together.
  7. Place powdered sugar in shall dish.
  8. Scoop out 12 balls of dough and roll lightly in powdered sugar.
  9. Place on cookie sheet. Bake 15 minutes.
  10. Roll warm cookies in remaining powdered sugar.
  11. Enjoy!
