lemon iced raspberry cookies
Here is a cookie that will explode with flavor in your mouth after the first bite. If you like raspberry, then you will love these cookies. My family request these, all the time. Not just for holidays anymore....I bet once you try these, they will become a favorite of yours:)

Makes approximately 5 dz
Ingredients
- 1 cup butter or margerine
- 1 - egg
- 1 1/2 cups powered sugar
- 2 teaspoons raspberry flavoring
- 2 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 4 - drops of red food coloring
- - glaze:
- - powered sugar & real lemon juice
- - red or yellow sugar crystals
How To Make lemon iced raspberry cookies

Step 1Mix powered sugar, butter, raspberry flavoring & egg in a large bowl. Stir in remaining ingredients. Cover & chill for at least 2 hours.

Step 2I use a large cookie scoop to make the cookies the same size. Place on a lightly greased or lined cookie sheet with parchman paper. Flatten the cookies before you bake them. I use the bottom of a 1 cup measuring cup! (I use parchman paper).

Step 3Heat oven to 375F

Step 4Bake 4:30 min, turn sheet & bake 4:30 more

Step 5Glaze: mix enough powered sugar & real lemon juice to spreadable consistency, ice cookies & then add colored sugar on top...ENJOY!
