I found the original recipe in a cookie book years and years ago, I've made some changed to fit my families taste, these are a light fuffy cookie and really, really good.

Ingredients For lemon drops

  • 1/2 c
    shortening
  • 1 c
    sugar
  • 2
    eggs
  • 1 tsp
    lemon extract
  • 2 c
    all purpose flour
  • 3/4 tsp
    salt
  • 1/2 tsp
    baking soda
  • 1/4 c
    lemon juice

How To Make lemon drops

  • 1
    Cream shortening, sugar, eggs and lemon extract with hand mixer until light and fluffy. Sift together dry ingredients; add alternatly with lemon juice to shortening mixture.

    Drop by teaspoon onto cookie sheet. Sprinkle with sugar or decorative cystals. Bake at 375 degrees for about 8 minutes.
