I found the original recipe in a cookie book years and years ago, I've made some changed to fit my families taste, these are a light fuffy cookie and really, really good.

Ingredients
- 1/2 cup shortening
- 1 cup sugar
- 2 - eggs
- 1 teaspoon lemon extract
- 2 cups all purpose flour
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 cup lemon juice
How To Make lemon drops

Step 1Cream shortening, sugar, eggs and lemon extract with hand mixer until light and fluffy. Sift together dry ingredients; add alternatly with lemon juice to shortening mixture.

Step 2Drop by teaspoon onto cookie sheet. Sprinkle with sugar or decorative cystals. Bake at 375 degrees for about 8 minutes.
