Finally made these cookies for my 14 year old granddaughter and her pals. They were really nice; not too sweet, just a little tart. Good for dipping in milk (per my granddaughter).

Makes about 24-36 cookies
Ingredients
- 1/4 cup butter, softened
- 2 tablespoons canola oil
- 3/4 cup sugar
- 1 large egg
- 1 - egg white
- 1/4 cup thawed lemonade concentrate
- 2 teaspoons grated lemon peel
- 2 cups all purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/8 teaspoon baking soda
- 1 tablespoon yellow decorating sugar

Step 1Preheat oven to 350º and prepare cookie sheets with parchment paper (you will probably need two) Cream the butter, oil and sugar in a large bowl Beat in the egg, egg white, lemonade concentrate and lemon peel

Step 2Combine the flour, baking powder, salt and baking soda Gradually add to butter and egg mixture

Step 3If you have one, use a cookie press and press dough 2 inches apart onto cookie sheet lined with parchment paper If you don't have cookie press, just roll dough into balls and place on cookie sheet and press down with flat bottomed glass about 2 inches apart Sprinkle with yellow sugar

Step 4Bake at 350º for 8-10 minutes or until edges are slight browned Cool on wire racks
