Finally made these cookies for my 14 year old granddaughter and her pals. They were really nice; not too sweet, just a little tart. Good for dipping in milk (per my granddaughter).

Ingredients

  • 1/4 c
    butter, softened
  • 2 Tbsp
    canola oil
  • 3/4 c
    sugar
  • 1 large
    egg
  • 1
    egg white
  • 1/4 c
    thawed lemonade concentrate
  • 2 tsp
    grated lemon peel
  • 2 c
    all purpose flour
  • 1/2 tsp
    baking powder
  • 1/4 tsp
    salt
  • 1/8 tsp
    baking soda
  • 1 Tbsp
    yellow decorating sugar

How to Make LEMON COOLER COOKIES (BY SALLYE)

Step-by-Step

  1. Preheat oven to 350º and prepare cookie sheets with parchment paper (you will probably need two)

    Cream the butter, oil and sugar in a large bowl

    Beat in the egg, egg white, lemonade concentrate and lemon peel
  2. Combine the flour, baking powder, salt and baking soda

    Gradually add to butter and egg mixture
  3. If you have one, use a cookie press and press dough 2 inches apart onto cookie sheet lined with parchment paper

    If you don't have cookie press, just roll dough into balls and place on cookie sheet and press down with flat bottomed glass about 2 inches apart

    Sprinkle with yellow sugar
  4. Bake at 350º for 8-10 minutes or until edges are slight browned

    Cool on wire racks
