lemon chewy cookies

This is one of my "throw-together" recipes. :-) The little bit of buttermilk brings out the lemon flavor even more. They taste better than they look in this picture. I'm having problems with my camera.

Ingredients

  • 1 cup butter, softened but not melted
  • 2 cups sugar
  • 2 medium eggs
  • 1 tablespoon lemon extract
  • 1 tablespoon lemon juice
  • 1/8 cup buttermilk
  • 2 cups unsifted all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • - powdered sugar for rolling cookies

How To Make lemon chewy cookies

  • Step 1
    By hand, cream butter and sugar in large mixing bowl. Add eggs, lemon extract, lemon juice,and buttermilk; blend well.
  • Step 2
    In a separate bowl, combine flour, baking soda, and salt; blend into creamed mixture. Don't over-stir.
  • Step 3
    Roll into walnut-sized balls and then roll in the powdered sugar. Place on a parchment lined cookie sheet.
  • Step 4
    Bake at 350 degrees for 10 to 12 minutes. Do not over-bake. Remove from oven and cool on wire rack.
