lemon chewy cookies
This is one of my "throw-together" recipes. :-) The little bit of buttermilk brings out the lemon flavor even more. They taste better than they look in this picture. I'm having problems with my camera.

Makes about 3 dozen large cookies
Ingredients
- 1 cup butter, softened but not melted
- 2 cups sugar
- 2 medium eggs
- 1 tablespoon lemon extract
- 1 tablespoon lemon juice
- 1/8 cup buttermilk
- 2 cups unsifted all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- - powdered sugar for rolling cookies
How To Make lemon chewy cookies

Step 1By hand, cream butter and sugar in large mixing bowl. Add eggs, lemon extract, lemon juice,and buttermilk; blend well.

Step 2In a separate bowl, combine flour, baking soda, and salt; blend into creamed mixture. Don't over-stir.

Step 3Roll into walnut-sized balls and then roll in the powdered sugar. Place on a parchment lined cookie sheet.

Step 4Bake at 350 degrees for 10 to 12 minutes. Do not over-bake. Remove from oven and cool on wire rack.
