karens almond cookies
My italian family always had a "cookie contest" after Christmas dinner. We'd all put our cookies on display and tried to figure out which was the best one. We were all winners! One of the recipes was for these almond cookies. They are kinda firm outside but soft and yummy inside. I make them every year now!They also freeze wonderfully so you can enjoy them year round.

Ingredients
- 1 cup flour
- 1 pound almond paste (not filling one)
- 3 cups eggs
- 1 cup sugar
- slivered almonds
How To Make karens almond cookies

Step 1Preheat oven to 350 degrees. Line cookie sheets with parchment paper (cookies come off easily!) First mix almond paste (I use the cuisinart and it's very quick) Once almond paste is smooth, add the flour. sugar and eggs.

Step 2Using small scoop or a tsp. drop cookies, one by one in the slivered almonds.(This is very sticky but don't give up! )Place on parchment paper)leave a little room between each.

Step 3Bake at 350 degrees 20-25 minutes until lightly golden and firm to the touch. Remove cookies while still warm. Cool on cookie rack.
