My friend, Kristin, sent me the original recipe for these. I made them per the recipe the first time but discovered that they needed "something" in the dough so my version includes a dash of salt and some vanilla or almond flavoring.

prep time 45 Min
cook time 15 Min
method Bake
yield 15-20 serving(s)

Ingredients

  • FOR THE DOUGH
  • 1 cup butter, softened
  • 2/3 cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla or almond flavoring (your preference)
  • 2 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 dash salt
  • FOR THE FILLING
  • 4 tablespoons or more red fruit preserves (raspberry, strawberry, etc.)
  • FOR THE GLAZE
  • 1 cup powdered sugar
  • 2 tablespoons cold water

How To Make jam slices

  • Step 1
Beat the butter and sugar until light and fluffly. Beat in the eggs one at a time and beat well after each one is added. Add the vanilla or almond flavoring. Combine the dry ingredients and add to the dough mixing until well incoporated.
  • Step 2
Divide the dough into 5 sections. Roll each until about 12 inches in length using a little flour on your hands and the counter so it doesn't stick. Place on parchment lined cookie sheets.
  • Step 3
Make an indentation along the center of each log and fill with preserves. (See photo) Bake on center rack of the oven for about 15 minutes or a little less at 400 degrees.
  • Step 4
Mix the powdered sugar and water and spread over the warm cookie logs. Cut into 1/2 inch wide diagnol slices while they are still warm.
