My friend, Kristin, sent me the original recipe for these. I made them per the recipe the first time but discovered that they needed "something" in the dough so my version includes a dash of salt and some vanilla or almond flavoring.

Ingredients

FOR THE DOUGH

1 c
butter, softened
2/3 c
white sugar
2 large
eggs
1 tsp
vanilla or almond flavoring (your preference)
2 1/2 c
all purpose flour
1 tsp
baking powder
1 dash(es)
salt

FOR THE FILLING

4 Tbsp
or more red fruit preserves (raspberry, strawberry, etc.)

FOR THE GLAZE

1 c
powdered sugar
2 Tbsp
cold water

How to Make Jam Slices

Step-by-Step

  • 1Beat the butter and sugar until light and fluffly. Beat in the eggs one at a time and beat well after each one is added. Add the vanilla or almond flavoring. Combine the dry ingredients and add to the dough mixing until well incoporated.
  • 2Divide the dough into 5 sections. Roll each until about 12 inches in length using a little flour on your hands and the counter so it doesn't stick. Place on parchment lined cookie sheets.
  • 3Make an indentation along the center of each log and fill with preserves. (See photo) Bake on center rack of the oven for about 15 minutes or a little less at 400 degrees.
  • 4Mix the powdered sugar and water and spread over the warm cookie logs. Cut into 1/2 inch wide diagnol slices while they are still warm.
