island kissed oatmeal cookies

My Mom used to put coconut in my oatmeal cookies, so I decided to play with the recipe & added some banana too! Great combination of flavors! These are best after allowing to sit 18-24 hours.

Ingredients

  • 1 cup butter, softened
  • 3/4 cup brown sugar, firmly packed
  • 1/4 cup sugar in the raw
  • 1/4 cup sugar
  • 2 - eggs
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 1/8 cups all purpose flour
  • 1/3 cup coconut flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon, ground
  • 1/2 teaspoon salt
  • 3 cups oats, uncooked (quick or old fashioned)
  • 1/2 cup pecans (chopped fine)
  • 3/4 cup coconut, shredded
  • 1 - banana (over ripe, mashed)

How To Make island kissed oatmeal cookies

  • Step 1
    Heat oven to 350. In large bowl, beat butter and sugars on medium speed until creamy.
  • Step 2
    Add eggs, vanilla & coconut extracts; beat well.
  • Step 3
    Add flours, soda, cinnamon & salt; mix well
  • Step 4
    Add oats, pecans & coconut. Mash banana in a small bowl, add to dough. Mix well.
  • Step 5
    Drop by rounded tablespoonfuls onto ungreased cookie sheet.
  • Step 6
    Bake at 350 8-10 minutes or until golden brown. Cool 1 minute on cookie sheet; remove to wire rack. Cool completely. Store tightly covered.
