island kissed oatmeal cookies
My Mom used to put coconut in my oatmeal cookies, so I decided to play with the recipe & added some banana too! Great combination of flavors! These are best after allowing to sit 18-24 hours.

Ingredients
- 1 cup butter, softened
- 3/4 cup brown sugar, firmly packed
- 1/4 cup sugar in the raw
- 1/4 cup sugar
- 2 - eggs
- 1/2 teaspoon vanilla extract
- 1 teaspoon coconut extract
- 1 1/8 cups all purpose flour
- 1/3 cup coconut flour
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon, ground
- 1/2 teaspoon salt
- 3 cups oats, uncooked (quick or old fashioned)
- 1/2 cup pecans (chopped fine)
- 3/4 cup coconut, shredded
- 1 - banana (over ripe, mashed)
How To Make island kissed oatmeal cookies

Step 1Heat oven to 350. In large bowl, beat butter and sugars on medium speed until creamy.

Step 2Add eggs, vanilla & coconut extracts; beat well.

Step 3Add flours, soda, cinnamon & salt; mix well

Step 4Add oats, pecans & coconut. Mash banana in a small bowl, add to dough. Mix well.

Step 5Drop by rounded tablespoonfuls onto ungreased cookie sheet.

Step 6Bake at 350 8-10 minutes or until golden brown. Cool 1 minute on cookie sheet; remove to wire rack. Cool completely. Store tightly covered.
