My Mom used to put coconut in my oatmeal cookies, so I decided to play with the recipe & added some banana too! Great combination of flavors! These are best after allowing to sit 18-24 hours.

Ingredients

  • 1 c
    butter, softened
  • 3/4 c
    brown sugar, firmly packed
  • 1/4 c
    sugar in the raw
  • 1/4 c
    sugar
  • 2
    eggs
  • 1/2 tsp
    vanilla extract
  • 1 tsp
    coconut extract
  • 1 1/8 c
    all purpose flour
  • 1/3 c
    coconut flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    cinnamon, ground
  • 1/2 tsp
    salt
  • 3 c
    oats, uncooked (quick or old fashioned)
  • 1/2 c
    pecans (chopped fine)
  • 3/4 c
    coconut, shredded
  • 1
    banana (over ripe, mashed)

How to Make Island Kissed Oatmeal cookies

Step-by-Step

  1. Heat oven to 350. In large bowl, beat butter and sugars on medium speed until creamy.
  2. Add eggs, vanilla & coconut extracts; beat well.
  3. Add flours, soda, cinnamon & salt; mix well
  4. Add oats, pecans & coconut. Mash banana in a small bowl, add to dough. Mix well.
  5. Drop by rounded tablespoonfuls onto ungreased cookie sheet.
  6. Bake at 350 8-10 minutes or until golden brown. Cool 1 minute on cookie sheet; remove to wire rack. Cool completely. Store tightly covered.
