My Mom used to put coconut in my oatmeal cookies, so I decided to play with the recipe & added some banana too! Great combination of flavors! These are best after allowing to sit 18-24 hours.

butter, softened
3/4 c
brown sugar, firmly packed
1/4 c
sugar in the raw
1/4 c
sugar

eggs
1/2 tsp
vanilla extract
1 tsp
coconut extract
1 1/8 c
all purpose flour
1/3 c
coconut flour
1 tsp
baking soda
1/2 tsp
cinnamon, ground
1/2 tsp
salt
3 c
oats, uncooked (quick or old fashioned)
1/2 c
pecans (chopped fine)
3/4 c
coconut, shredded
1
banana (over ripe, mashed)

How to Make Island Kissed Oatmeal cookies

Step-by-Step

  • 1Heat oven to 350. In large bowl, beat butter and sugars on medium speed until creamy.
  • 2Add eggs, vanilla & coconut extracts; beat well.
  • 3Add flours, soda, cinnamon & salt; mix well
  • 4Add oats, pecans & coconut. Mash banana in a small bowl, add to dough. Mix well.
  • 5Drop by rounded tablespoonfuls onto ungreased cookie sheet.
  • 6Bake at 350 8-10 minutes or until golden brown. Cool 1 minute on cookie sheet; remove to wire rack. Cool completely. Store tightly covered.
