iced oatmeal applesauce cookies

This is Susi's cookie recipe but has been adopted by my sister and me.- We love this recipe and so does my family and my daughter's 2nd grade classroom. These are healthy and moist;and what child or adult doesn't like frosting! Thanks Susi.

Ingredients

  • COOKIES:
  • 4 tablespoons unsalted butter, room temperature
  • 3/4 cup brown sugar, firmly packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup all natural applesauce
  • 1 1/2 to 2 cups old fashioned rolled oats ( up to 3 c.)
  • 3/4 to 1 cups all purpose flour up to 1 c.)
  • 1/2 cup stone ground whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1 cup craisins
  • ICING:
  • 1 cup powdered sugar
  • 2 tablespoons pure maple syrup
  • 1 tablespoon water

How To Make iced oatmeal applesauce cookies

  • Step 1
    Preheat oven to 350^. Cookie dough: Put butter and sugars in the bowl of an electric mixer fitted with the paddle or hook attachment. Mix on low speed until combined.
  • Step 2
    Add egg and applesauce; mix until well blended, 2 to 3 minutes. Mix in oats, flours, baking powder and soda and salt.. Mix in crasins.
  • Step 3
    Using a 1 1/2 -inch ice cream scoop, drop dough onto baking sheet lined with parchment paper, spacing 2 inches apart. Bake cookies 13-15 minutes-until golden and just set, rotating halfway through baking time. Let cool on sheets 5 minutes. Transfer to wire rack set over a piece of parchment paper, let cool completely.
  • Step 4
    Icing: Whisk all ingredients until smooth. Drizzle over cookies; let set. Cookies can be stored in single layers in airtight containers at room temperature. I used melted white chocolate and drizzled it instead of the icing. My bad.
