holiday oatmeal cookies
This recipe was given to me by my sister. I made a few minor adjustments. The oatmeal cookies are bursting with fruit and nuts. They are absolutely delicious. They are nice soft and chewy. I made two batches of these to Freeze for Christmas.

Ingredients
- 1 cup all purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnnamon
- 1/2 cup plus 2 tb butter
- 1/2 cup light brown sugar
- 1/2 cup granulated sugar
- 1 - egg
- 1 teaspoon vanilla
- 1 cup oatmeal
- 3/4 cup craisins or raisins
- 1 cup chopped dried or candied pineapple
- 1/2 cup chopped nuts walnuts or toasted pecans
- 2 ounces chopped candied cherries
How To Make holiday oatmeal cookies

Step 1Beat softened butter and sugars together in a bowl until smooth.

Step 2Add in the eggs and vanilla. Mix well and set aside.

Step 3In another bowl. Whisk together baking soda, salt, flour and cinnamon together.

Step 4Mix flour mixture with the sugar butter mixture. Mix well to combine.

Step 5Add oatmeal, fruit and nuts. Mix well. ( optional refrigerate dough for one hour prior to baking)

Step 6Drop by tablespoons onto parchment lined sheet pan.

Step 7Bake at 350 degree’s bake 10-15 minutes or until edges are light golden brown. Remove to wire rack to cool.
