holiday oatmeal cookies

This recipe was given to me by my sister. I made a few minor adjustments. The oatmeal cookies are bursting with fruit and nuts. They are absolutely delicious. They are nice soft and chewy. I made two batches of these to Freeze for Christmas.

Ingredients

  • 1 cup all purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnnamon
  • 1/2 cup plus 2 tb butter
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1 - egg
  • 1 teaspoon vanilla
  • 1 cup oatmeal
  • 3/4 cup craisins or raisins
  • 1 cup chopped dried or candied pineapple
  • 1/2 cup chopped nuts walnuts or toasted pecans
  • 2 ounces chopped candied cherries

How To Make holiday oatmeal cookies

  • Step 1
    Beat softened butter and sugars together in a bowl until smooth.
  • Step 2
    Add in the eggs and vanilla. Mix well and set aside.
  • Step 3
    In another bowl. Whisk together baking soda, salt, flour and cinnamon together.
  • Step 4
    Mix flour mixture with the sugar butter mixture. Mix well to combine.
  • Step 5
    Add oatmeal, fruit and nuts. Mix well. ( optional refrigerate dough for one hour prior to baking)
  • Step 6
    Drop by tablespoons onto parchment lined sheet pan.
  • Step 7
    Bake at 350 degree’s bake 10-15 minutes or until edges are light golden brown. Remove to wire rack to cool.
