SOUTH DAKOTA: Munch your way across the USA. Teresa Jacobson, the state of SD is now represented. This recipe is from "Capitol Cookies" with recipes from every state & Washington, DC. This recipe was submitted by SD Right to Life, Pierre, SD, Dan Wunrow, Executive Director. I made these cookies but my family didn't care for them that much. I thought they were good but I prefer a different type of cookie.

Ingredients
- 2 small very ripe bananas
- 2 cups unsweetened applesauce
- 3 tablespoons butter, softened
- 2 - eggs (or egg beaters)
- 2 teaspoons vanilla extract
- 2 cups oatmeal, uncooked
- 1 cup whole wheat flour
- 1 cup all purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 3/4 cup raisins or currants
- 1 cup chopped nuts (optional)

Step 1Preheat oven to 350. Lightly spray cookie sheets. Combine bananas, applesauce, butter, eggs and vanilla. Set aside.

Step 2In a large bowl, mix together oatmeal (old fashioned oats), flours, baking soda, salt, spices, raisins or currants and nuts (if using). Now add combined banana mixture to dry mixture and mix until just blended.

Step 3Drop by rounded tablespoonfuls onto cookie sheets. Bake at 350 for 20-25 minutes or until light golden brown.
