Ingredients

  • 1/2 cup low-fat creamy peanut butter
  • 1/4 cup butter
  • 1/2 cup packed light brown sugar
  • 1/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1 cup all-bran cereal
  • 1 cup shredded carrots
  • 1/2 cup chopped peanuts

How To Make healthy peanut butter cookies

  • Step 1
    Heat oven to 350. Place parchment paper down on baking sheets. In bowl, cream peanut butter, butter brown sugar, sugar, egg and vanilla until fluffy.
  • Step 2
    In another bowl, stir together flour,and baking soda. Mix flour mix into peanut butter mix. Stir in cereal, carrots and nuts.
  • Step 3
    Form dough into 1" balls. Place balls onto baking sheets, flatten balls w/ a fork. Place 2" apart. bake 10-12 mins, or until light brown.
