Ingredients

  • 1/2 c
    low-fat creamy peanut butter
  • 1/4 c
    butter
  • 1/2 c
    packed light brown sugar
  • 1/4 c
    sugar
  • 1 large
    egg
  • 1 tsp
    vanilla
  • 1 c
    flour
  • 1 tsp
    baking soda
  • 1 c
    all-bran cereal
  • 1 c
    shredded carrots
  • 1/2 c
    chopped peanuts

How to Make Healthy peanut butter cookies

Step-by-Step

  1. Heat oven to 350. Place parchment paper down on baking sheets. In bowl, cream peanut butter, butter brown sugar, sugar, egg and vanilla until fluffy.
  2. In another bowl, stir together flour,and baking soda. Mix flour mix into peanut butter mix. Stir in cereal, carrots and nuts.
  3. Form dough into 1" balls. Place balls onto baking sheets, flatten balls w/ a fork. Place 2" apart. bake 10-12 mins, or until light brown.
