Ingredients

  • 1-3/4 cup all purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 cup unsweetened applesauce
  • 3 tablespoons butter, room temp.
  • 1/2 cup packed light brown sugar
  • 1/2 cup reduced-fat smooth peanut butter
  • 1/4 cup egg beaters
  • 1/2 teaspoon vanilla
  • 1/3 cup plus 3 tbsp honey roasted peanuts, chopped

How To Make healthy peanut butter cookies

  • Step 1
    Heat oven to 350. Lay parchment paper onto 2 cookie sheets. In bowl, combine flour and baking soda.
  • Step 2
    In bowl, w/ mixer on medium,beat applesauce and butter until combined. Beat in brown sugar until creamy. Beat in peanut butter, egg beaters and vanilla until combined.
  • Step 3
    Beat in flour mix, then beat in 1/3 cup peanuts. Drop by tbsp-fulls 3"-apart onto baking sheets. Flatten into 2" rounds. Sprinkle dough w/ 3 tbsp peanuts, pressing into dough. Bake 8 mins, or until lightly browned
