No use of the stove or microwave for these yummy treats. This is a child safe and friendly recipe that can be changed to suit your taste. Don't be afraid to experiment and make them your own. As is, this recipe makes 8 cookies, 2 per serving. cal - 313 fat - 13 g sat fat - 2 g mono - 0 cholesterol - 0 carbs - 46 g protein - 7 g fiber - 4 g sodium - 284 mg potassium - 82 mg

Ingredients

  • 4 - whole-wheat graham crackers, finely ground
  • 1/4 cup raisins, or other dried fruit of your choice
  • 1/4 cup organic, natural peanut butter or other nut butter
  • 2 tablespoons organic honey plus
  • 2 teaspoons organic honey
  • 1/4 teaspoon ground cinnamon (adjust to your taste. i use a full tsp.)
  • 4 teaspoons organic, unsweetened coconut
  • OPTIONAL
  • 4 teaspoons or more chopped nuts instead of coconut
  • 1/2 teaspoon vanilla or flavoring of your choice
  • 1/4 can chocolate chips or other of your choice instead of raisins

  • TIP - using a dough roller works great to make fine grind graham cracker crumbs
    Step 1
    Combine all ingredients except coconut in a small bowl, mix well.
  • Step 2
    Divide into 8 portions and pat into cookie shape
  • When I want to shave more calories, carbs and fat from these cookies, I use Walden Farms peanut spread. Tastes awful alone, but it works nicely in this recipe...LOL

    Press lightly into coconut, ground nuts, or topping of your choice
