Healthier Than Candy Pumpkin Cookies

I made these cookies for a friend's children, as they aren't allowed to eat candy or anything too unhealthy. The kids loved them and my friend approved! You can use canned cream cheese or sugar free frosting, or make a home made cream cheese frosting with reduced fat cream cheese.

These yummy treats are super moist and delicious. They're so good, kiddos won't miss the candy. And adults can sneak a few too. I had extra cream cheese frosting so topped them with that and the flavor combination was fabulous. I highly recommend these!


18 1/4 oz
boxed spice cake mix
15 oz
pumpkin puree (not pie filling)
2 large
egg whites
1 c
quick cooking oatmeal
1 c
frosting of your choice
festive sprinkles


1Preheat the oven to 350 degrees F. Lightly spray a large cookie sheet with cooking spray.
2In a large bowl stir together the cake mix, pumpkin, egg whites, and oatmeal until combined. Drop heaping tablespoonfuls of batter onto the prepared pan.
3Bake cookies for 8-10 minutes or until slightly firm yet cake like when gently pressed. Cool on wire racks.
4Once cookies are cooled completely, frost cookies and decorate with sprinkles. Makes about 24 cookies.
