gumdrop cookies, my way

I love coconut, oatmeal, and gumdrops, but only specific flavors of gumdrops. So I choose only one flavor per batch. For example, red gumdrops, orange gumdrops. You can use whatever you personally like. You would NEVER find a lemon, lime, or other gumdrop in my cookies! LOL My mother in law says her mother in law, Gladys Wright, used to make Gumdrop Cookies, but never wrote the recipe down for her, and I have been making varieties every year but they aren't what she remembers. I'm making these next to take to her house! Wonder if they will approve these more than the ones I have made B4~LOL

Ingredients

  • 1 cup shortening
  • 1 cup brown sugar
  • 1 cup sugar
  • 2 cups flour (sift if you want, i don't)
  • 1 teaspoon powder
  • 1/2 teaspoon soda
  • 1/2 teaspoon salt (i omit)
  • 2 cups quick cooking rolled oats
  • 1 cup flaked coconut
  • 2 eggs
  • 1 teaspoon vanilla (okay, lets get real, try more like a really good splash, i don't measure)
  • 1 cup gumdrops (see notes in about my recipe)

How To Make gumdrop cookies, my way

  • Step 1
    Thoroughly cream shortening and sugars. Add eggs and vanilla, beat well. Sift in flour, powder, soda and salt. Add remaining. Rounded tsp on parchment lined cookie sheets (unless you really want to grease them). Bake at 375 degrees about 10-12 min.
