grandma's rhubarb bars
Even if rhubarb season is over, but you happened to freeze some, this recipe is worth using it in! It came from my Grandma Mickey, ranch cook extraordinaire!

Ingredients
- CRUST
- 1 cup butter, room temperature
- 2 cups flour
- 2 tablespoons sugar
- FILLING
- 6 - egg yolks
- 1/2 teaspoon salt
- 2 cups sugar
- 4 tablespoons flour
- 1 cup heavy cream
- 1 teaspoon vanilla
- 5 cups rhubarb, chopped
- TOPPING
- 6 - egg whites
- - dash salt
- 1/2 teaspoon cream of tartar
- 3/4 cup sugar
- 1 teaspoon vanilla
How To Make grandma's rhubarb bars

Step 1Preheat oven to 350*. Have ready a 9 x 13 inch pan.

Step 2For Crust: Mix sugar and flour. Cut in butter, until mixture is crumbly. (a food processor works well here) Pat into pan. Bake 10 minutes.

Step 3While crust is baking, prepare the filling: Beat egg yolks, salt, sugar, flour, cream, and vanilla. Add rhubarb. Pour over crust. Bake 25 minutes. Lower oven temp. to 300*, bake 20 minutes more. Remove from oven.

Step 4Raise oven temp. back to 350*

Step 5While your bars are baking, prepare the topping: Beat ingredients intil stiff peaks form. Spread over hot filling. Bake for 15 minutes, or until meringue is nicely browned.

Step 6Cool and cut into bars.
