Even if rhubarb season is over, but you happened to freeze some, this recipe is worth using it in! It came from my Grandma Mickey, ranch cook extraordinaire!

Ingredients

CRUST

1 c
butter, room temperature
2 c
flour
2 Tbsp
sugar

FILLING

6
egg yolks
1/2 tsp
salt
2 c
sugar
4 Tbsp
flour
1 c
heavy cream
1 tsp
vanilla
5 c
rhubarb, chopped

TOPPING

egg whites
dash salt
1/2 tsp
cream of tartar
3/4 c
sugar
1 tsp
vanilla

How to Make Grandma's Rhubarb Bars

Step-by-Step

  • 1Preheat oven to 350*. Have ready a 9 x 13 inch pan.
  • 2For Crust: Mix sugar and flour. Cut in butter, until mixture is crumbly. (a food processor works well here) Pat into pan. Bake 10 minutes.
  • 3While crust is baking, prepare the filling: Beat egg yolks, salt, sugar, flour, cream, and vanilla. Add rhubarb. Pour over crust. Bake 25 minutes. Lower oven temp. to 300*, bake 20 minutes more. Remove from oven.
  • 4Raise oven temp. back to 350*
  • 5While your bars are baking, prepare the topping: Beat ingredients intil stiff peaks form. Spread over hot filling. Bake for 15 minutes, or until meringue is nicely browned.
  • 6Cool and cut into bars.
