grandma ruth's maple/carmel ice-box cookies

My grandmother sent me this cookie recipe a long time ago.. I think I made it once and was in such a hurry in those days..that I never made it again. I am putting this cookie on my to do list. After making these cookies, and sampling for two days, I think I stumbled onto something. While using maple syrup, I tasted the maple syrup and took a bit of cookie...wonderful. ( did the same thing with ginger and it was not good).So I added maple syrup to this recipe.

Ingredients

  • 1 cup shortening (part butter or oleo), butter crisco
  • 2 cups brown sugar, firmly packed
  • 2 - eggs
  • 4 cups flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tarter
  • 1 teaspoon maple extract
  • 2 teaspoons vanilla
  • 1 cup walnuts, chopped

How To Make grandma ruth's maple/carmel ice-box cookies

  • Step 1
    Cream shortening and sugar. Add eggs and beat well. Sift dry ingredients together. Add to first mixture.
  • Ready to put in the refrigerator.
    Step 2
    Add chopped nuts & vanilla. Mix to a stiff dough. Shape dough into long rolls.(I made 2 rolls) Grandma used wax paper. (I used plastic wrap) Put in refrigerator for several hours to firm up. (2 hours in refrigerator plus 20 min in freezer.)
  • Step 3
    Preheat oven to 400 degrees. Slice (about 1/2")and lay on (butter crisco spray) cookie sheet. Bake in hot oven for about 9 to 10 minutes. *Pure convection 375 degrees about 11 minutes. Three cookie sheet at one time.
